Apple and Cheese Muffins Favorite

Ingredients:

- ¼ cup (35g) margarine or shortening
- ¾ cup (165 g) sugar
- ½ teaspoon (2.5 ml) vanilla
- 1 egg beaten
- 1 cup (150g) all-purpose flour
- 1 teaspoon (4 g) baking soda
- ¼ teaspoon (1 pinch) salt
- ½ teaspoon (2 pinches) cinnamon
- ¼ teaspoon (1 pinch) nutmeg
- 1 ½ cup (225g) of chopped apples
- 1 tablespoon (15 ml) cream
- 1 cup (100g) grated cheddar

Preparation:

1. Cream together margarine and sugar. Add vanilla and beaten egg.

2. Mix dry ingredients and add to liquid ingredients, stirring well enough to moisten.

3. Add apples, cream and cheese.

4. Fill the muffin cups.

5. Bake at 350 ° F (180 ° C) for 20 to 25 minutes.

The mixture is very thick and these tender and delicious muffins won't rise much during cooking.
