Servings: 6

Ingredients:

- 1 1 / 3 cup vegetable broth
- 1 stalk celery, finely chopped
- ½ red pepper, finely chopped
- 1 tablespoon dried onion flakes
- 2 teaspoons small dehydrated garlic flakes
- 2 / 3 cup quinoa grain well rinsed in cold water
- Salt and pepper
- 3 tablespoons food yeast (such as "Five Star")
- 2 cups ground tamari almonds or ground roasted almonds
- 3 tablespoons fresh parsley, chopped (keep some for garnish)
- All Purpose Flour
- Vegetable oil
- 6 hamburger buns or ciabatta bread
- Margarine
- Fresh tomatoes, diced
- Avocado, diced
- Sour Cream
- Condiments

Preparation:

1. In a medium size saucepan, boil the vegetable broth, celery, pepper, onion and garlic over medium heat. Reduce heat to medium-low heat and add quinoa. Cover and simmer 15 minutes. Remove saucepan from heat, cover and let stand 20 minutes or until the grains of quinoa are tender and liquid is absorbed.

2. Add food yeast, ground almonds and parsley. Mix well. Allow to cool until the preparation is easily manipulated by hand.

3. With lightly oiled hands, shape 6 patties with the preparation. Place patties on a lightly floured surface, then sprinkle with flour. Return, then sprinkle flour again. Transfer them on a large plate well oiled, and then return them to coat with oil. Set aside

4a. For Baking: Preheat oven to 400 ° F. Lightly oil a baking sheet and place the patties, being careful not to break them. Broil 7-8 minutes per side or until lightly browned. A few minutes before the end of cooking, add the hamburger buns on the grill to brown them a little.

4b. When cooking on the barbecue: Preheat barbecue to medium heat. Scrape the grill, then lightly oil it.
Place the patties, being careful not to break them. Broil 4-5 minutes per side or until lightly browned. A few minutes before the end of cooking, add the hamburger buns on the grill to brown them a little.

5. Immediately remove cakes from the grill, then place inside of each bun. You can brush the inside of each bun with margarine. Top each burger with tomatoes, avocado slices, sour cream and other seasonings if desired. Sprinkle over chopped parsley to garnish. Serve with a green and yellow beans salad or BBQ potatoes salad
