Spinach cream

Ingredients:

- 1 pkg (142 g) fresh spinach, washed and trimmed
- 1 cup soy milk
- 1 small potato, peeled and diced
- Salt and pepper to taste

Preparation:

1. In a small saucepan, cook potatoes in milk. The pan should be fairly small, so that the cubed potatoes are covered with milk. When the potato is cooked, pour the mixture into the blender.

2. Gradually add spinach, stirring between each addition.

3. Stir until mixture is frothy and smooth.

Can be served hot or cold.
