Chop_suey_tofu_mini

Servings: 4

Ingredients:

- ½ block of 454 g firm tofu, crumbled or diced
- 3 to 4 tablespoons tamari (more or less to taste)
- 2 to 3 tablespoon sesame oil
- 2 cloves garlic, pressed
- 1 stalk celery, coarsely chopped
- 1 zucchini, half-moons
- 100 g mushrooms, coarsely chopped
- 20 snow peas
- 1 sweet red or orange pepper, in pieces
- 2 to 3 good handfuls of bean sprouts
- Cashews to taste

Preparation:

1. In a bowl, marinate the tofu in the tamari.

2. In sesame oil, cook garlic, celery, mushrooms, tofu, snow peas, and saute a few minutes.

3. Add the tofu (and tamari) and saute a few minutes.

4. Add bean sprouts and saute 2 to 3 minutes more.

5. Just before serving, sprinkle with cashews.
