Carrots and Cauliflower Soup

A simple and delicious recipe that I got from my mom ...

Makes about 10 cups

Ingredients :

- 4 cups carrots (peeled if not organic), diced
- 2 cups cauliflower, cut into florets
- 1 or 2 large onions, diced
- 5 or 6 cups vegetable broth
- 1 potato, (peeled if not organic) diced
- Herbes de Provence
- Thyme
- 1 bay leaf

Preparation :

1. Cook the vegetables in the broth with a bay leaf until the vegetables are tender. Remove bay leaf.

2. Put the mixture in a blender and season to taste with herbs and and thyme.
