Lentil fricassee

Servings: 4

Ingredients:

- 1 large onion, chopped
- 1 tablespoon vegetable oil
- 3 cups potatoes (peeled if not organic) cubed
- 3 carrots, sliced (peeled if not organic)
- 1 cup turnips, peeled and cubed
- 1 stalk celery, coarsely chopped
- Soy broth or vegetable
- 1 bay leaf
- ½ red pepper, coarsely chopped
- 1 ½ cup cooked lentils
- Salt and pepper

Preparation:

1. Sauté onion in oil.

2. Add potatoes, carrots, turnips, celery, broth and bay leaf. The broth should cover completely the vegetables.

3. Put the bay leaf and simmer until the potatoes are cooked but still slightly crunchy. add red pepper 5 to 10 minutes before the end

5. Add the lentils and heat through. Season to taste with salt and pepper.

The fricassee is also very good when replacing the broth with "vegetarian chicken"  broth and "faux-chicken".
