Celery Soup

A delicious creamy and tasty soup.

Servings: 4-5

Ingredients :

- 4 cups celery, diced
- 3 potatoes (peeled if not organic), diced
- 2 cups water
- 2 cups vegetable broth
- Salt and pepper to taste
- 1 cup soy cream (or regular cream) or soy milk (or other milk)
- Parsley

Preparation:

1. Bring lightly salted water to a boil. Also put the pieces of celery and potatoes. Season to taste with salt and pepper. Simmer over medium heat for 20 minutes or until vegetables are thoroughly cooked.

2. Mix in blender and return to pot. Reheat over low heat, pouring the cream until desired consistency. Serve hot, garnished with parsley.
