Sweet Potato Gratin

Ingredients:
-  30 crackers (flavour: wheat and onions)
- 1 tablespoon margarine
- 2 potatoes (peeled if not organic) and sliced
- 3 green onions, chopped
- 1 can (540 ml) white beans, rinsed and drained or 1 can (540 ml) lentils
- 2 small sweet potatoes, peeled and sliced
- 1 cup vegetable broth
- 1 tablespoon all-purpose flour
- 100 g cheddar cheese (optional)


Preparation:

1. Preheat oven to 400 ° F. Spray a 8 inches square baking dish (2 liters) of cooking oil.

2. In a plastic bag (Ziploc style), crush crackers into coarse crumbs. Add margarine and press to spread it evenly.

3. Put green onions and beans in blender.

4. Arrange in a layer one half of sliced potatoes, making them overlap slightly. Sprinkle one third of the mixture of onions and green beans. Repeat the above steps with sweet potatoes. Whisk the broth with flour, then pour over top. Sprinkle with bread crumbs preparation. Add grated cheese, if desired. Cover the dish with foil (spray oil if the foil was sprinkled with cheese to keep it from sticking to the paper).

5. Bake in center of oven 50 to 60 minutes or until potatoes and sweet potatoes are easily pierced with the tip of a knife. Let stand 5 minutes before serving with steamed vegetables.
