Watermelon and Tomato Salad with Feta

Salade_melon_tomates_feta_mini

Savory, sweet and salty — what more can you ask for?

Ingredients :

- 3 cups tomatoes, diced to about 1 inch
- 1/2 tsp sea salt
- 20 mint leaves, coarsely chopped
- 1 green onion, sliced
- 3/4 tbsp cider vinegar
- 1 1/2 tbsp olive oil
- 3 cups watermelon, diced to about 1 inch
- 1/3 cup feta (or more to taste), diced 1/2 inch (rinse well with water to remove excess salt)

Preparation:

1. Place a sieve over a bowl. Also put the tomatoes and mix with salt. Let stand 30 minutes to 2 hours to drain.

2. In a small bowl, prepare the vinaigrette: Mix the mint, green onion, cider vinegar and olive oil.


3. In a large bowl, combine tomatoes and watermelon. Drain excess liquid.

4. Add dressing and toss gently. Add the feta.


Variation: you can also add diced cucumber to the salad.
