Black Bean Salad with Lime

The lime gives a lot of freshness to this colorful recipe prepared in a jiffy!

Ingredients :

- Juice of 2 limes
- 1/3 cup olive oil
- 1/2 c. teaspoon salt (optional)

- 2 cups cooked black beans
- 2 tomatoes, diced
- 1 red pepper, diced
- 1 cucumber, diced
- 1 1/2 cup fresh or frozen corn (thawed)
- 3 green onions, chopped
- 1 avocado, diced


Preparation:

1. In a small bowl, combine dressing ingredients: lime juice, olive oil and salt, if desired.

2. In a large bowl, combine beans, tomatoes, peppers, cucumbers, corn and green onions.

3. Add dressing and mix well. Add the avocado and toss gently.

This fresh tasting salad deserves to be served with corn chips and/or salmon in coconut crust.
