Rice and Vegetables Omelet-Loaf

Serve your rice ... sliced!

Ingredients:

- Olive oil
- 1 onion, chopped
- 1 zucchini, grated
- 3 carrots, grated
- 1 1/2 cup cooked rice
- 1 tablespoon tamari sauce or Bragg
- 3 eggs

Preparation:

1. Sauté onions in olive oil until translucent.

2. Add zucchini, carrots and rice. Continue to cook, stirring for 5 minutes. Remove from heat and let cool.

3. Add the tamari and eggs and mix well.

4. Place the mixture in a greased cake pan and bake at 350 degrees F for 35 minutes.

 

 


5. Let cool a bit to facilitate the service. Serve sliced​​, hot, cold or warm with salad orsteamed vegetables.

Very good with a mushroom sauce.
