Quinoa Flakes Cakes Favorite

DE-LI-CIOUS for breakfast and very nutritious.

Servings: 4

Ingredients :

- 1 cup quinoa flakes
- 1 cup unsweetened almond milk (or rice milk)
- 2 eggs
- 1/2 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt
- 1 tbsp of coconut oil virgin (non-hydrogenated) or other oil

Preparation:

1. In a bowl, combine all ingredients (except oil). Let stand a few minutes.

2. Heat oil in a skillet. 
Pour into the frying pan into 4 patties. Fry on both sides. (You can also make a version "mini cakes" by filing a tablespoon of mixture in both the pan. This will give about 16 mini cakes).

3. Serve with almond sauce or applesauce.

Variation: add a grated apple and a handful of raisins to the mixture before cooking and you'll have delicious pancakes with apples and raisins.
