Red Lentil Veggieballs

Crispy and golden on the outside but tender inside.

Makes about 35 meatballs

Ingredients :

- 1 1/4 cup red lentils, sorted and rinsed
- 400 ml water
- 1 onion, chopped
- 1 clove of garlic
- Fresh parsley, chopped
- Salt and pepper to taste
- puffed brown rice cereals (Rice Crispies type)

Preparation:

1. Bring water to boil and add lentils. Simmer for about 15 minutes. Stir regularly.

2. In a small skillet, sauté onions and garlic in a little bit of oil until the onions are translucent.

3. Remove lentils from heat and add onion, garlic, salt and pepper. Mix well. Add puffed rice cereal until the texture looks like ground beef.

3. Make about 35 small meatballs. Fry in oil until browned.


You can also cook the meatballs in the oven at 350°F for about 20-30 minutes.
