Kale and Squash Sauté

An almost perfect marriage of cabbage and tamari with the sweetness of the squash!

Ingredients :

- 1 tbsp olive oil
- 1 onion, coarsely chopped
- 2 cloves garlic, pressed
- 1/4 cup water
- 1 tbsp tamari or Bragg sauce
- 1 pinch of chili powder
- 1 pinch black pepper
- 4 cups kale, chopped (remove the tough stems)
- 2 cups cooked squash, cubed

Preparation:

1. In a large skillet, heat oil over medium heat. Sauté onion for three minutes. Add garlic and cook another two minutes (careful not to burn garlic).

2. Add kale, squash, water, soy sauce, chili and pepper. Cook for five minutes or until kale is wilted.
