Onion soup with miso

Soupe_oignon_mini
Ingredients:

- 1 tablespoon of olive oil
- 1 tablespoon butter
- 9 medium onions, sliced
- 3 cloves garlic, pressed
- 6 cups of water
- 2 teaspoons of dried marjoram
- 2 teaspoons of miso
- 6 slices of toasted bread, cubed
- 2 cups (200 g) of Swiss cheese (or cheddar), grated
- Salt and pepper to taste

Preparation:


1. Melt the butter in a saucepan and add oil. Add onions and sauté until lightly browned.

2. Add garlic and cook 1 minute more. Add water and marjoram and bring to a boil and simmer 20 minutes uncovered.

3. Melt the miso in the soup and season with salt and pepper to taste.

4. Pour the soup into 6 ovenproof bowls. Sprinkle bread cubes and add the grated cheese on top.

5. Broil on top rack of oven until cheese is golden.
