Tender green couscous

	Servings: 6 to 8
	
	Ingredients:
	
	- 1 cup vegetable broth
	- 1  tablespoon olive oil
	- 250 g couscous
	- 2 tablespoons margarine
	(or replace the first 4 ingredients for about 3-4 servings of cooked couscous)
	- 1 green pepper, cut into chunks
	- 1 small broccoli, into florets
	- 1 cup green peas
	- 1 can (540 ml) chickpeas, drained and rinsed
	
	Preparation:
	
	1. In a large saucepan, place vegetable broth and the oil. Bring to a boil.
	
	2. Remove from heat and add the couscous, stirring gently. Allow to swell for 2 minutes. Add margarine and fluff the couscous with a fork.
	
	3. In a frying sauté the peppers, broccoli and peas a few minutes.
	
	4. Add vegetables and chickpeas to the couscous.
	
	Serve hot or cold.
