Thai Shrimp

This meal tastes different from what one can be used to enjoy in America. If you are not accustomed to the red curry paste, you can decrease the quantity.

Servings: 4 to 6

Ingredients:

- 2 tablespoons oil
- 2-3 cloves garlic pressed
- 1 red pepper, diced or sliced
- 1 green pepper, diced or sliced
- 1 can (398 ml) coconut milk
- 4-5 tablespoons red curry paste
- 2 tablespoons flour
- 2 tablespoons lime juice
- 3-4 tablespoons sugar
- 400 g cooked shrimp
- 200 g of tofu cubes (optional)
- 3-4 tablespoons of ground peanuts (optional)

Preparation:

1. Sauté garlic in oil for about 1 minute. Add peppers and cook 1 minute.

2. Add remaining ingredients, simmer until you have a smooth sauce.

3. Serve over rice or couscous. Sprinkle ground peanuts, if desired.
