Rainbow couscous

	Ingredients:
	
	- 2 tablespoons vegetable oil
	- 1 zucchini, diced
	- 1 orange pepper, diced
	- 1 ½ cup vegetable broth
	- 1 cup couscous
	- ½ can of hearts of palm, drained
	- ¾ cup red beans
	- Black olives, sliced
	
	Preparation:
	
	1. In a small saucepan, heat oil over medium heat. Add zucchini and peppers and cook, stirring often, for 2-3 minutes.
	
	2. Add the vegetable broth and bring to boil. Add couscous and stir. Cover pan, remove from heat and let stand for 5 minutes. Add hearts of palm, red beans and black olives.
